Have you joined the Snowdonia winter climbs group on Facebook, or the Ground Conditions in the UK Mountains group. The latter is very active but many people posting are walkers rather than climbers, but you can still infer a lot from post.
Also have you looked at the UKC winter ascents list? It will give you a good idea of what has been done recently.
