That sounds like a good plan, there's a lot to go at in the Fanes. You can make an easy tour from Rifugio Pederu up to Rifugio's Lavarella and Fanes which you can stay at. Once you're up there there's loads of easy stuff to go at (Sasso delle Dieci, Monte Castello, Furcia Rossa III - ask at the rifugio's for conditions and details).
Another really nice and fairly easy two day tour is a traverse of the Marmolada and San Pellegrino from Malga Ciapela. Starting from Malga Ciapela you ascend the Valle di Franzedas to Passo di Forca Rossa and then ski down the opposite side to to Rifugio Fuciade where you stay the night. The second day you ascend north-east to Forcella del Bachet and then ski east down the Valle Ombretta back to Malga Ciapela. The final ascent to Forca Rossa requires a safe snowpack however.
