For Saas mountain route recommendations, rock routes aside (though Dri Horlini and Jagihorn are very good venues), much will depend on glacial conditions. I went out early September last year and was shocked at how bad things were, whilst after the 18th the mountains then got buried by a monster 7 day snow storm.
So you'll have to work through all the obvious Facebook groups and other alpine conditions portals (camptocamp.org, for example) in great detail to figure out what will be doable as well as preferable..
I should also be in the area from early September, so happy to exchange further ideas and information when i have it..
