Contemplating this journey in early February, ideally do it in a day starting with an early flight from Manchester.  Travel days likely Saturday out, return Sat or Sun.

Does anyone know the timing of buses/ trains, make any recommendations please?

Joining a group there with a car.

A 10 second google revealed this bus company running busses from Turin  to the Aosta Valley.

Here's the timetable from turin airport to Aosta   http://www.savda.it/public/documenti/224.pd

You'll need to make the journey in three legs - Turin Airport (Caselle) to Turin Centre, Turin to Aosta town, Aosta to Cogne.

There is a bus that you can get from the Airport that goes into Turin city (Porta Susa) and then departs after a 20min wait in the city for Aosta. This might make things a little easier with lots of luggage - http://www.savda.it/it/106/vd-a-caselle-apt/ - looks like just under 3 hrs all in for this bus journey.

There's then a Bus to Cogne from Aosta that takes about 1hr of travel. There are buses at 17:45 and 18:45 that would tie in nicely with an early flight and afternoons bus travel - https://www.svap.it/public/orari/orari_linee/34_aosta-cogne.pdf
