We love taking our dog out on the hills, a few things we've found that have helped our working cocker spaniel:

Removing the 'squeaker' from a toy to use to draw his attention away from undesirable things! It's tiny enough to store in a chest pocket.
We also have a key word we use rather than his name "ball ball"- some dogs will ignore their name as they often hear it!
Our boy has a Ruffwear fleece top for overnight camping to ensure he's warm throughout when it's cold at night.
When we leave routes with hostels/in car we also leave a picture of ourselves including the dog for the Rescue services to know what he looks like just as well as us.
Teaching them to wait at stiles and to 'jump over' when you're there to support.
