It's possible to climb anywhere* in the rain. You just won't enjoy it much.

Except Southern Sandstone. That's a no-no.

No big perma dry caves, but in the right conditions (not raining too heavily, wind blowing over the top of the crag) you can find dry rock. The shorter stuff on the unrestricted side of the gorge is generally better for this.

Really? I've always found Cheddar to be just about the worst place for wetness... Usually think Avon is a better bet because it drys quickly but then it actually needs to stop raining for that to happen!

The shorter North side stuff is not very steep, often has flat /  hirizobtalh eh? horizontal holds so will get wet,  unless you can climb hard, eg at the Remnant, 2 x 6's but mainly above 7a+, but those tops will probably be wet. South side...  Shaking like a leaf 7a simetimes and harder routes on high rock left can stay dry a while, as can Ginsberg wall, but you are looking at 7a or 7b minimums. All depends on breezes, can blow over too a bit on stuff mentioned,  and heaviness of rain, but you will probably encounter wet holds somewhere after a while eg the top of get that man! . At first sign of light rain you could be ok for a while. Redpoint and UcR stay quite dry if it ends up getting soaked at Cheddar. You could probably work some Cheddar stuff. Best just to go when the forecast says no rain tho.
