I've not managed to find out online (or I'm missing something obvious), but does anyone know if you can search text in documents which you've scanned into Apple notes?

I know you can search hand written notes (done with Apple pencil).

Also, can you separate documents out? E.g. if you had a printed CV, could you scan it and save the images as CV 1, CV 2 etc if it ran to multiple pages?

Any experience would be welcomed

Apparently not but various third-party apps will do it for you. OCR is the feature you're looking for if you're Googling it.
