Does anyone know if you can buy Gas for backpacking stoves in either the one-stop or Spar shops in Hathersage? Failing that the Garage at Bamford or in Hope itself? Need a gas canister but won't be driving through until about 7pm.

Which direction are you coming from, and what day? Go Outdoors Chesterfield are open until 8pm on weekdays I believe.

I can't say definitively, but I'm in there once or twice a week and have yet to notice any.

Spar in Hope do or have previously sold some gas (and other camping bits). Across from the bread perhaps?

But I haven't paid much attention to whether it's the canisters for the car camping stoves or for a backpacking stove like a pocket rocket (etc).

Probably better ring and ask and not rely on my vague recollection. 

I think you'd be in with a chance at the other places you mention as well - maybe add the petrol station in Hathersage next to Outside to your list?

Update: I've been in Hope Spar today and only saw some weird little campingaz piercable canisters - not what you want I think.
